aliciavilos AJO BLANCO (Almond Cold Soup)

aliciavilos 70gr almonds 1 clove of garlic 50gr stale bread 1 small glass of olive oil 1/4 lt milk 1/2 lt water pinch of salt a few drops of vinegar

aliciavilos Mash the almonds with the clove of garlic and a pinch of salt

aliciavilos It's easier to crush the almonds if you can buy laminated almonds

aliciavilos Put that mixture in the vase, together with the bread soaked in the milk

aliciavilos And start procesing it with the mixer. Add a little water if necessary

aliciavilos As you mix, add the olive oil little by little

aliciavilos And continue the mixing till you get a thick mixture with all the almonds, garlic, bread, milk and oil

aliciavilos Then add the water and continue mixing

aliciavilos When the soup reaches the right consistency, add a few drops of apple vinegar and check for salt

aliciavilos It can be served with grapes, apple dices or in these case, raisins

aliciavilos A Delicious Spanish Soup made with almonds & a touch of garlic, ideal as an appetizer or first course for a hot summer day
